11 am (I closed last night so I woke up late) One Liter of Water

1 pm 28 ounces green juice (lemon, ginger, collard greens and romaine with 2 packets of STEVIA to sweeten it up).

any brand of Stevia will do...my favorites for flavor and price are Truvia and Stevia in the Raw. Stevia is an HERB not a sugar (like fruit juice) or a chemical (like Equal or Sweet & Low) which make it the best way to sweeten your morning juice and keep it low-glycemic.

230 pm 2 bananas and 1 cup of strawberries

330 pm Lara Bar (Cashew Cookie Variety)

Lara Bars are AWESOME. Read the ingredients on the back of one and you will understand why. They are processed sugar-free, dairy free, gluten free, pretty much processed ingredient free. The ingredients list reads like this....cashews, pistachios, dates. How amazing is that, a bar made of such amazing things and nothing else! They are very filling.

630 pm Huge Salad ( 8 ounces of spinach, with lots of chopped carrot, yellow pepper, green onion, cucumber, cilantro) INSTEAD OF DRESSING I mashed up whole ripe avocado, squirted a little fresh lemon and put a bit of salt and pepper in it and mixed this together with the salad.

7 pm ½ butternut squash (it was too much, I couldn’t finish it). I cooked the squash in the oven with 1 tablespoon of organic BUTTER, salt, pepper and garlic. I also heated up ¼ cup of pre-prepared ORGANIC, SUGAR FREE spaghetti sauce

9 pm I had an ENTIRE Green and Blacks DARK chocolate bar (70% cacao content) and a glass of red wine.

Some notes about today.

  • Today was a weird day to start this because I was trying to return my mind and body to a day schedule for tomorrow so I actually ate less than I would normally eat.
  • I was at Costco today and had the privilege of watching the blendtec blender in action. They are on sale at Costco for $379.00 and to get the 7 year warranty is totally free when you buy from Costco. I became friends with Jamie, the sales rep and almost cried telling him how much I wish I could afford one of these machines. Both the Blendtec and the VitaMix blenders get me really revved up..must be all that horsepower they pack.
  • It was a cold day today. I went down to the candle light vigil on 24th and Franklin. There were probably 300 or so people in attendance. The people of Seward are heartbroken over this tragedy. It was nice to see so many people come together to show their respect and offer support.
  • Total time spent today in the kitchen 1 hour. This time includes preparation and clean up but not total oven cooking time because, well, I left the kitchen and did other things.
